Mexico cuisine is one of the most traditional cuisines around the world. Mexican food has its owned unique taste and complexity that mostly comes from native ingredient using such as corn, beans, avocados, tomatoes and chili peppers along with rice. The Mexican food empathizes on spices and flavor which make their dishes becoming popular around the world. Many dishes have brought to the world such as tacos, quesadillas or pambazos.

Taco is a traditional Mexican recipe which is made from corn, tortilla, cheese and proteins such as beef, pork, chicken or seafood. Because of the combination of many ingredients, taco will give you a party in your mouth with many flavors that you cannot help but keep coming back for more. The dish also has great versatility and variety. And the dish is so famous that whenever people talk about Mexico cuisine, they think about taco.

With the popularity of healthy trend nowadays, we are advised to eat more healthy dish and vegetables to boost our metabolism and immune systems. So today, we would like to introduce a recipe that can both represent for Mexican food and healthy diet trend: Taco Salad.

Taco Salad

Ingredients (the prep will take about 10 minutes)

  • 1 pound of Ground Beef
  • 1 can of Corn
  • 1 can of Kidney Beans
  • Ranch Salad Dressing
  • Chili Powder
  • Lettuce (rinsed and drained excess water, chopped)
  • Tomatoes or Cherry Tomatoes (chopped into cubes)
  • Tortilla Chips (Texas shape or crushed into small pieces)
  • Cheese (shredded – optional)
  • Olive Oil

Cooking (cooking will take about 5 minutes)

Step 1 – cooking beef: Heat a pan with a teaspoon of olive oil until the oil is hot. Then add 1 pound of ground beef, cook until the beef turns brown and drain. Add ranch salad dressing into the pan, enough to coat the meat. Sprinkle chili powder and adjust based on your preference. Mix all the ingredients together. After that, put 1 can of corn and 1 can of kidney beans into the mixture and heat them through.

If you want you salad fresh, you can cook corn and kidney beans separate and add them later in your salad.

Step 2 – serving: It is the time of displaying and garnishing the salad. You can layer ingredients. Start with a layer of lettuce, then a layer of kidney beans, corn and chopped tomatoes on top. The next layer is tortilla chips. Add cooked ground beef on top and sprinkle some shredded cheese over the top of the salad. The other option is mixing all the ingredient together and serve.

Healthy Recipe

The salad is served cold and is enough for a meal of 2-3 people. This recipe is easy and not time-consuming at all! Taco salad can be appetizer or snack. You can make them right before dinner.
