Taco Salad {recipe}

I think every family has a few recipes in their arsenal that are staple. This taco salad is definitely one of ours. It’s easy to make and we almost always have at least most of the ingredients already in stock. Plus it’s super delicious!

Ingredients:

  • 1 lb ground beef
  • 1 can corn
  • 1 can kidney beans
  • Ranch salad dressing
  • Chili powder
  • Lettuce
  • Tomatoes
  • Tortilla chips
  • Cheese

1. Brown the ground beef and drain. Add enough ranch to the meat to coat. Sprinkle about 1/2 Tbs chili powder. Mix together. Mix in corn and kidney beans. Heat through.

2. Now it’s time to start layering. Start with a layer of crushed tortilla chips (it’s ok if you don’t have Texas shaped one…not everyone can be THAT cool), then a layer of lettuce. Add some meat mixture and top with the cheese and tomatoes. I also like to drizzle a little more ranch on top. Toss together and dig in!

I always end up eating way too much when we make this, but it’s so delicious! The recipe makes enough for our family of 2 adults and a 3 year old (though she tends to eat quite a bit of this). We even have leftovers for my husband to take to work.
